To select the best professional pastry chef at national level in Bulgaria to represent the country at the international final of the “Premio Internacional de Alta Pastelería Paco Torreblanca”, in the Best Chocolate Cake category, which will take place in Spain in 2027, on the date officially confirmed by the Organisation.
The call is open to professional pastry chefs who meet all of the following requirements:
Registrations shall be submitted exclusively through the official form provided by the Organisation.
The registration period shall open on june 1st and close on september 15th, unless extended or modified by the Organisation.
The competition will be held in BIOREST CUP 2026 on October 20th
The Organisation may modify the date, venue, schedule or format of the competition for organisational, technical, logistical, legal, health, safety, force majeure or operational reasons. Any relevant change will be communicated to selected participants with reasonable notice whenever possible.
The professional category of the Paco Torreblanca International High Pastry Award shall be held in two phases:
The Organisation shall ensure the availability of the technical equipment necessary for the proper conduct of the competition, providing homogeneous, functional and fair conditions for all participants.
The Organisation shall appoint a Selection Committee composed of representatives of Escuela Torreblanca and renowned national professionals, which shall be responsible for selecting the participants who will compete in the National Final from among all candidates who register in due time and form in accordance with these Rules.
The Selection Committee shall apply objective, fair and transparent criteria, taking into particular account the candidate’s professional background and experience, achievements, work portfolio and motivation. The committee shall ensure fairness in the process and shall properly document its decisions.
All contestants must comply with the following standard dress code:
Participants may bring certain elements and pre-prepared components already finished, such as sponge bases, inserts, glazes, decorative elements, and other components that do not require handling at the time of presentation. However, the final assembly of the cake, as well as the decoration and chocolate work, must be carried out at the competition venue, ensuring that the main production is completed within the allotted time.
During the 3 hours of the competition, participants must complete their preparations, assemble, decorate, cut and present their cake to the jury.
The cakes presented shall be evaluated according to the following criteria, with a scoring system based on coefficients:
The jury shall evaluate each aspect in accordance with these criteria, ensuring a fair and balanced assessment.
Each contestant must produce 3 cakes in which the dominant flavour is chocolate, incorporating vanilla bean as a complementary ingredient.
The chocolate used must be exclusively that of the official chocolate partner / main sponsor: [NAME OF CHOCOLATE SPONSOR]. For the National Final, [NAME OF CHOCOLATE SPONSOR] shall supply the chocolate, in accordance with the specifications previously submitted by each participant. Vanilla bean may be freely chosen by the contestant and incorporated in different forms or textures according to their creative criteria.
The cake must have a distinctly chocolate-forward flavour profile, with vanilla present in the interior, whether as cream, mousse, gel, or any other pastry technique.
The cakes must weigh between 600 g and 1,000 g.
Contestants are free to decide the format and dimensions of their cake. They may use any mould or decorative element they deem appropriate.
The jury shall be composed of recognised professionals from the national and international pastry sector, appointed by the Organisation. Their decisions shall be final and not subject to appeal.
In accordance with Regulation (EU) 2016/679 of the European Parliament and of the Council (General Data Protection Regulation – GDPR) and any applicable national data protection legislation in [COUNTRY], participants are informed that their personal data shall be collected and processed by the Organisation for the purpose of managing their participation in the competition.
The data may be shared with members of the Organisation, including third-party collaborators of the event, exclusively for purposes related to the performance, evaluation, promotion and management of the competition.
Participation in the competition implies express acceptance of these data processing conditions, as well as authorisation for the use of images and audiovisual materials captured during the competition, in accordance with the communication and dissemination needs of the event.
Participants may exercise their rights of access, rectification, erasure, objection, restriction of processing and portability by sending their request to [DATA PROTECTION EMAIL].
The data shall be retained only for the time necessary to manage the competition and, thereafter, in accordance with the periods established by applicable law.
Participants also accept that their data may be incorporated into the commercial and marketing database of Escuela Torreblanca and may receive promotional and informational communications regarding future courses, master’s programmes and activities organised by the school, unless they object or withdraw consent where required by law.
Participants assign to the Organisation, free of charge, the image rights and intellectual property rights arising from their participation in the competition, including the capture and use of photographs and videos, as well as the reproduction, distribution, public communication and transformation of such images and recordings for the promotion and dissemination of the competition, the creation of advertising material, and any purpose related to the activities of the competition.
The Organisation may use these rights in any media or format, whether printed, digital, audiovisual or technological, whether existing now or developed in the future, and may sub-license or assign these rights to third parties (including sponsors, collaborators, media outlets and advertising agencies) to the extent necessary for the competition.
This assignment is granted for the maximum period permitted by law, with national and international territorial scope, and shall be irrevocable except where otherwise provided by mandatory law. Participants expressly waive any financial compensation for such assignment and undertake to hold the Organisation harmless against third-party claims related to these rights.
Any claim related to the competition must be submitted in writing to the Organisation within 7 calendar days following the end of the competition. Claims must include full details of the claimant and any supporting evidence.
The Organisation shall respond within a maximum period of 15 business days. Liability is expressly excluded for losses or damages arising from events beyond the Organisation’s reasonable control, technical issues, injuries, or any improper use of the prize by the winners.
The Organisation may exclude, without prior notice, any participant acting fraudulently or contrary to the spirit of the competition. In the event of force majeure or justified organisational need, the Organisation reserves the right to cancel, modify, postpone or suspend the competition.
Participation in this competition implies full acceptance of these Rules, as well as any interpretative decisions adopted by the Organisation and the jury within their respective powers.
These Rules shall be governed by and construed in accordance with the laws of Spain.
Any dispute arising from the interpretation, validity, performance or enforcement of these Rules shall be submitted to the Courts and Tribunals of Alicante, Spain, and the parties expressly waive any other jurisdiction that may otherwise correspond to them, except where mandatory law provides otherwise.
