In the Professional Category, participants compete to earn the recognition of Best Chocolate Cake in Bulgaria 2027 before a jury composed of nationally and internationally recognized professionals and industry leaders.
It is an opportunity to give visibility to your work, measure yourself against other professionals in the sector, and turn a strong proposal into a real pathway for international professional growth.
In addition, the winner will represent Bulgaria at the International Grand Final in Spain, competing for the title of Best Chocolate Cake in the World 2027 before a jury that includes some of the world’s best pastry chefs and cooks, and competing against the winners from the other participating countries worldwide.

To participate in the Paco Torreblanca International High Pastry Award – Bulgaria 2027, applicants must be at least 18 years old at the time of registration, demonstrate professional experience in the field of pastry, and apply in their own name. Applications submitted under commercial brands, companies or third-party business names will not be accepted.
Entries will be evaluated according to a comprehensive scoring system that considers not only the final cake itself, but also cleanliness and organization, visual presentation, cutting quality, flavor, texture and decoration.
Each evaluation criterion is assigned a specific weighting and will be scored on a scale of up to 20 points.
The cake submitted must have chocolate as its dominant flavor profile and weigh between 600 g and 1,000 g.
Participants are free to choose the format, design and dimensions of their cake.
Pre-prepared components and decorative elements are permitted; however, the final assembly and presentation of the cake must be completed on-site during the competition.

National Qualification Round
Among all applications submitted in Bulgaria, the National Organizing Committee will select the national finalists who will advance to the Bulgaria National Final.
PHASE 02
Bulgaria National Final 2027
The selected finalists will compete in the Bulgaria National Final 2027 for the title of Best Chocolate Cake in Bulgaria.
PHASE 03
International Grand Final in Spain
The winner will travel to Spain with all expenses covered to compete alongside the other international finalists for the title of Best Chocolate Cake in the World.

All pastry professionals over the age of 18 who can demonstrate professional experience in the field are eligible to participate. Applicants must submit an original chocolate cake creation and participate in their own name, without representing their own or any third-party commercial brand.
The Professional Category consists of two stages: a national qualification round and the International Final. The winner of the Bulgaria National Final will earn the right to represent Bulgaria at the Paco Torreblanca International High Pastry Award Final, which will be held in Spain.
The application process is completed exclusively through the official registration form provided by the organization.
Applications for the Bulgaria 2027 National Selection must be submitted through the official competition website within the registration period established by the National Organizing Committee.

The evaluation criteria include work process, cleanliness and organization, visual appearance, cut, flavor, texture and decoration.
Each criterion has its own scoring coefficient and will be evaluated on a scale of up to 20 points.
The jury is composed of recognized professionals from both the national and international pastry sector.
The total duration of the competition is 3 hours.
In addition, participants will be granted 45 minutes prior to the start of the competition to complete their mise en place and prepare their workstation.
The final 30 minutes of the competition must be dedicated to cleaning, organization and the proper presentation of the workspace for evaluation by the jury.
The cake must have chocolate as its dominant flavor and weigh between 600 g and 1,000 g.
The format, design and dimensions are unrestricted, allowing participants full creative freedom in the presentation of their creation.
